One tricky unlock is that of King Dedede, who requires players to win the Smash Ultimate Gourmet Race to earn a chance to beat him. Here's how to do it.
The mode tasks players with collecting as many food items as possible, with a certain threshold determining whether or not King Dedede appears. This method will ensure the he does.
At the start of the race, take the upward path to the top of the map and pick up the pear. Head forward, then take the next turn down to grab the soup. Follow that path toward the end of the race, grabbing the cola before turning down again for the sandwich. Continue toward the end of the race on the right of the screen and grab another bowl of soup.

Turn down at the next fork to get the salad, then turn back up to grab the loaf of bread. Head right and grab the apple before turning up for the shish kebab. Turn right for the full chicken, then follow the grapes to the finish line.
If you follow these steps exactly, you'll receive the chance to challenge King Dedede. Defeat him, and he'll join your roster of characters.
